The roasters we want on our shelf.

We’re building a small, rotating selection of ultra-light and very light roasts from independent roasters. Here are the roasters whose work defines the style we’re after. We don’t stock their coffee yet. Our launch lineup will be announced to the waitlist first.

To be clear: Ultralight Coffee has no partnership with the roasters below yet, and nothing here is in stock. The profiles are based on what each roaster publishes about itself. Follow the links to buy from them directly today.

Paris, France

Substance Café

Often mentioned as one of the reference points for ultra-light roasting. Substance is a small coffee bar and roastery in Paris’s 2nd arrondissement, run by Joachim Morceau, who roasts and brews everything himself.

  • According to Substance, Joachim chose to roast very lightly years ago to keep each coffee’s terroir, a style now known as ultra-light roasting.
  • Roasts in small volumes on a Loring S7 in the shop’s workshop.
  • The bar is seated-only and by reservation. No takeaway, no sugar, no music, so the coffee is tasted as it is.

Paris, France

Datura

A Paris micro-roastery focused on seasonal microlots. Datura says it picks green coffees for their aromatic qualities and keeps adjusting its profiles for each coffee rather than following fixed “espresso” or “filter” roasts.

  • Founded in 2024 by Loïc Perneau, a former barista and café manager, according to The Way To Coffee.
  • Roasts at the start of each week and ships within the same week, per its website.
  • Home brewers commonly describe its coffees as needing a generous rest before they peak. Follow the roaster’s own guidance.

Amsterdam, Netherlands

DAK Coffee Roasters

An Amsterdam roaster founded in 2019 by Louis-Philippe Boucher and Véronique Lagarde, originally from Montreal. DAK is known for clean, bright, light roasts and for always offering experimental, unusually processed lots alongside more classic origins.

  • Roasts on IMF convection roasters at its roastery in Amsterdam Noord, which it says produces clean, bright and sweet coffees.
  • Runs a showroom in Amsterdam where the public can taste its coffees.
  • Ships to customers and wholesale partners in many countries.
